The potager originally refers to a stove

The potager is an old kitchen stove that appeared in the 17th century. It consisted of a masonry construction pierced with square holes where embers taken from the fireplace were placed. This arrangement allowed for the monitoring of the cooking of broths and veloutés for long hours.
