Saffron possesses insecticidal properties

Picrocrocin is a glycoside responsible for the bitter aroma of saffron. It is formed by the union of an aldehyde and a carbohydrate, and also possesses insecticidal and pesticidal properties. This molecule is present at a level of approximately 4% in dried saffron.
